An Elegant Alternative to Turkey
Holiday cooking does not have to revolve around turkey. In this demonstration, we show you how to enjoy duck in every course, even dessert!
Join us in the Monarch Culinary Studio for a chef-led demonstration built around an elegant three-course holiday menu designed for entertaining. At the centre of the evening is one of the most rewarding proteins to master at home: perfectly cooked duck breast with crisp, rendered skin and a tender, juicy centre.
Throughout the class, we’ll break down the techniques that make duck cookery approachable, from proper scoring and heat control to resting and carving. We’ll also explore how to build a polished holiday plate with layered potato pavé, seasonal vegetables and a balanced sour-cherry jus.
Just as importantly, we’ll look at how to organize and execute a special-occasion dinner so that more of the work can be completed in advance—leaving you with less stress and more time at the table with your guests.
